Those who value the health benefits of apple juice may use the cloudy type instead of its clear counterpart.  A new study has found that cloudy apple juice contains much high levels of polyphenols and possesses much higher capacity of scavenging free radials.

The Polish study, published in Journal of the Science of Food and Agriculture, found the polyphenol content in cloudy apple juice can be four times higher than clear apple juice.


In the study, Jan Oszmianski and colleagues at the Agriculture University of Wroclaw and the Medical University of Warsaw compared two types of apple juice: the clear Idared apple juice versus the cloudy Champion apple juice for their content of polyphenols and antioxidative capacity.


Clear apple juice produced from the Idared apple variety contained 250 milligrams of polyphenols per liter whereas cloudy juice from the Champion apple variety contained 1044 milligrams per liter, the researchers reported.


They explained that production of clear apple juice requires use of enzymes to get rid of pectin and starches in the juice, a process that results in loss of polyphenols.


In addition, using electron paramagnetic resonance (EPR) spectroscopy, the researchers found the radical-scavenging activity of the cloudy Champion apple juice scavenged 93 percent of the DPPH (1,1-diphenyl-2-picrylhydrazyl) radical within three minutes, compared to 24 percent by the clear Idared variety juice.
